The largest serving of roast pork is 6,626.15 kg (14,608 lb 2.5 oz) and was achieved by Fundación Produce Yucatán, A.C. (Mexico) in Mérida, Yucatán, Mexico, on 6 March 2016.
Fundación Produce Yucatán sought to regain their previous Guinness World Record title for the largest serving of roast pork. A traditional cochinita pibil was prepared using 47 ovens and served from a 50 meter long serving dish. The cochinita pibil was served in the traditional Yucatan-style with hand patted tortillas, pickled red onions and habanero sauce. There were 250 student volunteers from the Universidad Tecnológica del Poniente who helped prepare, cook and serve the public.
