Largest menudo soup

The largest menudo soup weighs 1,106.31 kg (2,439 lb) and was prepared by Juanita’s Foods (USA) in celebration of National Menudo Month, at the Juanita’s Foods Headquarters in Wilmington, California, USA, on 28 January 2018.

The record-setting menudo soup was prepared by five chefs from Juanita's Foods, joined by thirteen chefs from The International Culinary Schools at the Art Institutes, over the course of eight hours. It contained approximately 990 lb of tripe in beef broth, 590 lb of hominy, 590 lb of water, 80 lb of onions, 45 lb of red chili puree and 144 lb of additional spices. Not included in the record weight are garnishes that were added on top of individual servings, which included 875 limes, 54 lb chopped onion, 28 lb chopped cilantro, and 4 lb dried oregano. The soup was prepared in a giant 300 gal kettle, with a 4 ft 10 in diameter and 4 ft depth. All soup remaining after the record event was donated to charitable organizations in the local community, Food Finders, Long Beach Rescue Mission, and Dream Center.
